
We’re always here for an easy, feel-good treat—bonus points if it’s made with simple ingredients and a little herbal love. So when our friend Fino put together these jammy oat & date bars with our Elderberry Lung Support Syrup, we couldn't wait to share.

obviously i love to invent a dessert with minimal ingredients and natural, unrefined sugars. so when you asked me to make these i was excited - and i really loved the lung syrup especially after wintering in LA during the fires. i find these ingredients really nourishing, and the herbs from the syrup pair perfect with a bit of jam :)
Let's get into it!
Ingredients:
Crust:
- 4 cups rolled oats
- 2 cups almond butter (or nut butter of choice)
- 1 cup pitted dates
- pinch salt
- 1/2 tsp vanilla powder (optional!)
Filling:
- 1/4 cup jam of choice <3 i used harrys berrys strawbverrry jam
- 1 tbsp wooden spoon lung syrup
Instructions:
1. line a 8x8 dish with parchment paper - in a food processor add all ingredients besides jam & syrup and pulse until crumbly and mixture sticks together when pressed between your fingers. divide into two bowls.
2. add half of the mixture to the dish and press firmly - in a small bowl mix your jam & syrup together - spread evenly across the oat mixture with a spoon or spatula. stick in freezer for 20 minutes.
3. remove dish from freezer - and press down the rest of the mixture to cover the jam. put back into freezer for 10 minutes, and then slice to your liking :)
