With spring cresting, we’ve noticed our cravings shifting from comforting bowls of soup to fresh, blended breakfast smoothies. And whether we need a post-gym pick-me-up or a morning ritual to motivate us before a day of work, our Earth Day Elixir featuring Magic Magnesium jump-starts any humdrum day with a burst of color, thanks to blue spirulina and a matcha coconut cream top. Simply freeze an ice cube tray of Magic Magnesium cubes and pop the azure jewels into your a.m. routine. We love the body coconut milk provides, but any alternate milk (or yogurt) will work to create a tempting springtime smoothie. 

Makes 2 smoothies

Ingredients:

  • 1 can of coconut milk, refrigerated overnight
  • 1 tablespoon matcha powder, whisked 
  • 2 teaspoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups unsweetened coconut milk, from carton
  • 2 tablespoons Magic Magnesium powder
  • 1 frozen banana, broken into pieces
  • 2-3 coconut meat pieces, frozen
  • ¼ cup coconut water from the frozen can of coconut milk used in the whip

Instructions

1. Prep the Night Before
In a small bowl or measuring cup, whisk together coconut milk (from a carton) and your Magic Magnesium powder until fully dissolved and smooth. Pour the mixture into an ice cube tray and freeze overnight.

2. Make the Matcha Coconut Whip
When you're ready to make your smoothie, begin by preparing the coconut whip. Scoop only the solid cream from the top of a chilled can of coconut milk and place it into a large bowl or the bowl of a stand mixer. Add the powdered sugar and vanilla extract. Using a hand mixer or the whisk attachment of your stand mixer, whip the mixture until soft peaks form. Drizzle in the matcha powder and continue whisking until the whip is fluffy and cloud-like.

3. Blend the Smoothie
To make the smoothie, combine 4 frozen Magic Magnesium cubes, banana, coconut meat, and coconut water in a blender. Blend until smooth and creamy, using a tamper or pulsing as needed to keep things moving.

4. Serve and Enjoy
Pour the vibrant blue smoothie into tall glasses and top generously with your dreamy matcha coconut whip. Sip, swoon, and enjoy!
